Sweet and sour chicken is a dish that has always been well loved and will always go down a treat.  Whatever the weather or the mood, it’s an ideal dinner.  January is a time when we’re trying to be healthy, yet we also feel like we need a treat too!  There’s only one thing for it: a fakeaway.  Go for a fakeaway this Friday and enjoy this delish dish instead of your usual takeaway.

 

Sweet & Sour Chicken

Serves 2

Sweet & Sour Chicken Recipe
Sweet & Sour Chicken

 

Ingredients:

  • 2 Skinless chicken breasts cut into cubes
  • 25g Cornflour
  • 2 Eggs – lightly beaten
  • 2 tbsp soy sauce
  • Salt & pepper

 

For Frying:

  • 100g Cornflour
  • 500ml Vegetable oil

 

For Sauce

  • 2 Red bell peppers – sliced
  • 100ml Apple cider vinegar
  • 50g Honey
  • 2tbsp tomato puree
  • 1 tin of chopped pineapple in juice
  • 2 cloves crushed garlic
  • 1tbl grated ginger
  • chopped spring onion and sesame seeds to serve with cooked rice

 

Instructions:

  1.  In a bowl add chicken, cornflour, salt, pepper soya and eggs and combine until evenly coated and chill

2.  Remove from the fridge, add to flour and fully coat (if you need to you can add a little extra soya to help fully combine)

3.  Heat pan with sunflower oil 1cm high

4.  Using tongs, add the chicken to the oil and fry until golden brown, about 4-5min

5.  Set aside and discard remaining oil

6.  For the sauce, heat oil in frying pan over a medium heat

7.  Add garlic and peppers and saute until soft

8.  Add pineapple and juice, tomato puree, ginger, honey and apple cider vinegar

9.  Combine and bring the mixture to a boil

10.  Add the chicken, stir and evenly coat with sauce

11.  Serve with rice, topped with spring onions and sesame seeds
