Friday Fake-A-Way: Warm Potato Salad With Smoked Salmon And Capers

Storm Jonas gave us a serious battering this week and we’re all craving some lovely warm comfort food to mark the end of the week.

This recipe might not sound as tempting as an Indian takeaway but trust us when we say that it is FULL of flavour, with creamy sauce and lots of carby goodness.

Better still, it’s also pretty healthy so you can save your cheat meal for something over the weekend!

Here’s what you need…

Smoked salmon

Coriander

Capers

New potatoes

Cream cheese

Lemons

Red onion

Here’s what you need to do…

Pop your potatoes on to boil for about 15-20 minutes while you prep everything else.

Slice up your red onion as thinly as possible and grate the yellow rind of your lemon.

Chop up your coriander until it is very fine. Then, strain a handful of capers and have them ready to go.

When the potatoes are soft in the middle, strain them and allow to cool for a few minutes. Then slice them up and pop them into a bowl with a big spoon of the cream cheese.

Add all your prepared ingredients, as well as the juice of your lemon. Stir it all up together until it’s well combined.

Slice up your smoked salmon and pile on top.

Serve as a starter, snack or part of a delicious dinner! How simple is that?
