The end of the week definitely calls for a little treat but you don’t want to undo all your healthy choices in the process.
This Weight Watchers recipe only takes 15 minutes to prepare (and 25 minutes cooking time) and has only six SmartPoints per serving.
Enjoy with some creme fraiche and fresh fruit for an indulgent tasting dessert that will be a hit with the whole family!
Here’s what you’ll need…
40g (1½ oz) low fat spread
40g (1½ oz) light muscovado sugar
75g (2¾ oz) self raising flour
1 tablespoon cocoa powder, plus extra, to dust
1 tablespoon skimmed milk
4 tablespoons half fat crème fraÎche, to serve
4 strawberries, halved, to decorate
½ teaspoon vanilla extract
Here’s what you’ll need to do…
Use a tiny amount of the low fat spread to grease six castle pudding moulds or ramekins.
Put the remaining low-fat spread into a mixing bowl with the sugar, flour, cocoa powder, milk and vanilla extract. Crack in the egg and then beat with a wooden spoon for one minute until all the ingredients are combined.
Share the mixture between the six moulds or ramekins and then place a piece of greased foil on each one, wrapping it tightly around.
Stand the moulds or ramekins in a large lidded saucepan and add enough boiling water to come about one-third of the way up their sides. Cover and steam over a low heat for 25 minutes.
Run a kitchen knife around the pudding moulds or ramekins and invert to release them.
Serve with the crème fraÎche and strawberries before dusting with a little cocoa powder.
Cook’s tip: Check the level of water from time to time to make sure that the saucepan doesn’t boil dry and top up if necessary.
