When it comes to Friday, our energy levels are generally running pretty low and the thought of cooking two or three different dishes to keep all the members of the family happy is not appealing in the slightest.
That’s why recipes like this one for tasty meatballs are so handy as they’re substantial enough to satisfy a big appetite but will still get the thumbs up from the little ones.
This simple recipe has only eight ingredients (perfect for when the cupboard stocks are running low!) but it’s very forgiving so feel free to add whatever you please!
Here’s what you’ll need…
Pasta (we recommend papardelle to hold loads of the yummy sauce)
Two cloves of garlic
One tin of plum tomatoes
One chilli (optional)
One chicken stock cube
Here’s what you’ll need to do…
Chop up your chilli finely and take out the seeds if you want a milder flavour
Chop up your onion and garlic as small as possible
Take half of your garlic, onion and chilli and mix it up in a bowl with your hands
Roll your mix into balls (about the size of a golf ball)
Add some oil to a pan and slowly cook the other half of your onion, chilli and garlic mix. It will smell amazing and be careful not to burn!
Next, add your meatballs to the pan and keep them moving until they start to get brown
Add your tomatoes to the pan, crush them with a wooden spoon and stir
Mix your stock cube with about half a pint of boiling water and then pour into the pan
Simmer for 15 minutes as the sauce thickens
While you’re waiting, grate your parmesan cheese
Once the sauce is nearly ready, put your pasta on the boil
Drain your pasta, add the meatballs and sauce on top, finish with the cheese and you’ve got an unbelievably tasty dinner in no time!
