While we may stick with the healthy eating plan all week, a lot of us fall by the wayside on Friday as we’re just too tired to face the kitchen.
Before you call for that Indian takeaway, take a look at this super tasty and nutritious recipe for Chicken And Broccoli Pasta – it can be pulled together in 15 minutes, requires no complicated chef techniques and will be a hit with all the family.

Start your prep by chopping your broccoli into small pieces, before grating the zest of a lemon and slicing up your garlic into tiny pieces.
Next, chop up your parsley finely and grate your Parmesan.
Throw the pasta into a saucepan of boiling water. In order to make your chicken cook quicker, try the butterfly technique. Slice through the thickest part of the breast and then spread it out until you have a larger, thinner piece of meat.
Season the chicken with salt, pepper and olive oil on both sides before placing it on a pre-heated frying pan. Make sure the pan is really hot.
Add your broccoli to the saucepan with the pasta to cook for a minute or two.
Meanwhile, pop your lemon zest, a dash of olive oil and your garlic into the pan. Make sure not to burn the garlic!
Immediately add the juice of two lemons and let the sauce come up to a boil for 30 seconds. Try not to let the pips fall into the pan because it will take you ages to fish them out.
Strain your pasta and broccoli and add to the pan, followed by the Parmesan and parsley.
Season with more salt and pepper and stir it all up well so that the pasta is completely coated with your tasty ingredients.
Place your chicken fillet on a plate before adding a pile of your pasta mix on top.
