Friday Night Fake-Away: Treat Yourself To Fish And Chips

Are you ready for some delish fish and chips?

If you’re anything like us, you no doubt know that craving for a gorgeously tasty plate of fish and chips come the weekend.  It mightn’t be the healthiest dinner around, but it’s hard to deny yourself that tasty flavour.  Thankfully, there’s a healthy version of the classic meal that you can make yourself for a Friday night fake-away – you’re going to love it!

Ingredients

For the fish:

2 x skinless boneless cod fillets (or any fish you like)
1 tsp paprika
3 tsp of lemon juice
1 tsp of parsley
1/2 tsp basil
1 tsp mustard powder
1 clove garlic
150g of plain couscous
2 x medium eggs
Pinch of salt and pepper
Boiling water

For the wedges:

4 large potatoes
Salt and pepper
Paprika

Method:

For the fish:

Add couscous into a mixing bowl.

Mix together with paprika, lemon juice, parsley, basil, mustard powder, garlic, salt and pepper.

Cover the mixture with boiling water and let it stand for 5 minutes.

Beat the eggs and add to the couscous mixture. Mix to a smooth consistency and use to coat the fish.

Place on grease proof paper in the centre of the oven for 30 minutes on 200c.

For the wedges:

Cut potatoes into thick wedges and par boil for 5 minutes.

Place onto a baking tray and season with salt, pepper and paprika.

Bake in the oven for 25 – 30 minutes on 200c.

Serve and enjoy!
