When it comes to a quick dinner, a stir-fry is usually a good bet.

Friday is one of our favourite evenings to whip up a stir-fry as it means we can use up the contents of the fridge and still have a delicious dinner in less than 20 minutes.

This Pure Kitchen dish has chilli, soy sauce and toasted seeds but as with all our recipes, feel free to add or take out anything you want.

As well as tasting delicious, this is super healthy so you can have a nice dessert too!

Step-6

Here’s what you’ll need…

One chicken breast (cut into thin strips)

One medium courgette (cut into ribbons)

One medium carrot (grated)

A quarter of a small head white cabbage (shredded or finely chopped)

Handful of baby spinach

Two scallions – finely chopped

One red chilli – finely chopped

Three dessert spoons of soy sauce

Two dessert spoons walnut oil

One dessert spoon sesame oil

Toasted nuts and seeds to garnish

Here’s what you need to do…

Prepare all your veg and chicken. Make your dressing in a jug and leave to the side with fork in it so you can mix it up just before adding.

Get your pan good and hot and add some coconut oil or extra virgin olive oil. When hot, put chicken in and toss around for a minute until it’s cooked fully all the way through.

Add in your courgette, cabbage & carrot and toss around for a minute. Next, measure the ingredients for your dressing.

Add in most of your dressing followed by the spinach, scallions and chilli and toss around again until the spinach is wilted. Have a quick taste and see if you need the end of your dressing.

Empty into a big bowl and garnish with your toasted nuts and seeds and enjoy!
