One of the best things about lazy Sundays is having the time to whip up something extra special for brunch.
If you’re spoiling the man of the house for Fathers Day, this delicious sandwich is the perfect choice as its healthy, substantial and doesn’t require you to spend hours in the kitchen.
The key thing here is getting really ripe avocados for that burst of freshness and if you fancy having it for dinner, just add some sweet potato fries. Yum!
Here’s what you’ll need…
- Turkey Breasts
- Fresh ciabatta or baps
- Smoked cheese (or whatever is in the fridge!)
- Cos/baby gem lettuce
- Cajun seasoning
Here’s what you need to do…
The most important part of this recipe is getting your avocados right so make sure that yours are ripe and soft to the touch. They’ll probably be dark in colour rather than green.
Chop up your avocado, add salt and lots of lemon juice to bring out the flavour.
Cut off the root of your lettuce and separate your leaves. Slice your ciabatta open and sprinkle with olive oil.
Cut your turkey steaks as thinly as you can before adding olive oil and sprinkling them in cajun seasoning. Make sure they’re well covered with the spice mix.
Peel or grate your cheese.
Add your turkey to the pan and cook on both sides until cooked. Then, add the bacon. Once both are cooked, pop the cheese on top.
Time to put it all together! Add a thick layer of your avocado before piling on the turkey, bacon and cheese.
Finish with your lettuce and the rest of the avocado and you’ve got a tasty, guilt-free feast!
