When you’re trying to eat healthy, the temptation to cheat can be greatest on a Sunday.
We all know how it goes.
You’re tired from the weekend’s activities and Monday is looming on the horizon.
You see the menu for the local takeaway on the counter in the kitchen… it would taste so good… it would mean you wouldn’t have to cook… you deserve it for being so good all week… STOP!
Don’t throw away all your hard work on a greasy dinner when you can whip up this super tasty treat in half an hour with minimal effort. Add a steak or some chicken and you’ve got a meal just as indulgent as that takeaway pizza without all the ensuing guilt!
Sweet Potato Wedges With Whipped Feta, Black Pepper and Lemon Dip

Wash your sweet potatoes and slice them in half lengthways before chopping them into wedges. Try to make sure that they are the same size so that they cook evenly.
Place them into an oven tray with the thyme leaves, chilli flakes, olive oil and some salt and toss them around until they’re all covered.
Pop them into the over at 200 C for 30 minutes, tossing occasionally to make sure they don’t stick.
Next up, start on your dip. Add the feta cheese, tons of black pepper and some oil to a bowl before adding a few spoons of natural yogurt to create the right consistency.
Add the juice of a lemon and whip the whole mix up until you get a semi-smooth texture.
Once your sweet potatoes are smooth on the inside and crispy on the outside, take them out and put them on a plate.
Spoon your feta mix over them… and dig in!
